On the 19th episode of the tvN entertainment show “Business Genius Baek Chef 2,” the story of running a Korean pub in San Sebastian, a city in Spain known for having the most Michelin-starred restaurants per square mile in the world, continued.
On the day of checking the third day’s sales, Baek Jong-won and the members showed a confident demeanor despite their nervousness. This was due to the fact that both the outdoor and indoor seating areas were fully occupied, and they even sold out some menu items.
There was a lot of attention on whether they could break away from their perennial fifth place ranking. Lee Kyu-hyung showed strong confidence, saying, “Shouldn’t we aim for third place?” Especially since they needed to record third place in sales to open a fifth store, expectations were high.
However, when the sales were revealed, they were disappointed to find out that they did not exceed their target of 1000 euros (approximately $1,080). Despite this, the overall sales of the surrounding alley restaurants decreased, and thanks to this, the pub’s sales ranking rose to fourth place, one step higher than before.
While they celebrated achieving a “new record,” they also could not let go of their doubts as the sales amount was less than expected. Seeing the overwhelming sales of the first and second place stores also momentarily deflated their spirits.
Nevertheless, Baek Jong-won stated, “We’re also doing this for promotion purposes at the moment. Let’s aim to increase sales by adding desserts to the menu.” He further revealed his confidence by saying, “It was an investment. If we stop the service, sales will skyrocket. There’s no rush. So far, it’s been a warm-up.”
In his efforts to boost sales, Baek Jong-won said, “I want to show something we haven’t seen before. Would they like it if we display a poncho? I thought of gimbap. Can’t we introduce Korean food by making gimbap into finger food, about two pieces each?”
He also added the idea of showing the process of making gimbap through a window as a performance. Baek Jong-won expressed his enthusiasm by saying, “I want to show that gimbap with sesame oil is Korean food. Japan has sushi, right? If we clearly say it, it’s different. I want to highlight gimbap.”
